Chenpi is aged dried peel of the Xinhui mandarin, one of Guangdong's "three treasures," and Meijiang village produces some of the most prized fruit. With five years of aging the peel's oil glands concentrate and the fragrance deepens from sharp citrus into a warm, sweet, almost woody aroma. It is wonderfully versatile: steeped on its own, paired with pu-erh, or added to soups and braises in southern Chinese cooking.
For tea, rinse a small piece, then steep in hot water or simmer with pu-erh. For cooking, add a strip to broths, congee or braised dishes and remove before serving. A little goes a long way.
A kitchen-and-tea-cabinet essential for anyone who loves real citrus depth.
