Biluochun — the tea the Kangxi Emperor named for its spring-green spiral — comes from the East and West Dongting mountains beside Suzhou's Taihu Lake. There the tea bushes grow interspersed with plum, loquat and citrus trees, and the leaves take on a quiet natural fruit-and-flower perfume. The shoots are tightly twisted into tiny, downy spirals; the old local nickname, "startlingly fragrant," says the rest. The cup is fresh, delicate and sweetly aromatic.
Because Biluochun is full of fine down, add water first (80–85°C) and gently place the leaves on top rather than pouring onto them. Use about 3g; short, light infusions bring out the sweetness.
A fragrant, elegant green tea for anyone who loves delicate floral notes.
