Lapsang Souchong is regarded as the ancestor of the world's black teas, born in the protected forests of Tongmuguan in the Wuyi Mountains. This is the non-smoked expression, so it keeps the tea's true character without the pine-fire aroma the export version is known for. Expect a soft longan-fruit fragrance, a sweet honeyed undertone and a smooth, clean cup that is equally good on its own or with a splash of milk.
Steep about 4–5g at 90–95°C for 20–30 seconds in gongfu style for several rounds, or 3–4 minutes in a Western pot. For a southern-style refresher, add a slice of lemon and a little honey and serve over ice.
A historic, easy-drinking black tea for every hour of the day.
